Microwaved fries "perhaps you do not understand fries"

We order steak sandwich in Hotel restaurant near coast near Lisbon

We get old french fries obviously heated up in microwave

We ask we think they're old can u get us fresh ones?

15 min later waiter brings fresh fries super crunchy super hot etc obviously newly made and others were like 5 hours old from lunch

But ok no problem, solved

Then he says yes they are different types of fries but perhaps you do not understand them (implying the previous fries did not have a problem, we just do not understand their advanced fries)
